For series, well, that's a long list! Try going to AniDB.net, you can sort by type/rating/user reviews/popularity, click on an anime to get a summary, see some user reviews, get an idea what kind of story it is.
Personally, I'd recommend Neon Genesis Evangelion. They've remade it, but I'd say just go ahead and watch the original. It's deep, but still plenty of action. Fullmetal Alchemist is a bit more cartoony, but treats the subject material lightly and doesn't over dramatize the emotional moments, which leaves you to pick up the slack. Very well done. Black Lagoon is another good one. Stylized, like a John Woo movie.
Anyway, there's millions of others, I just thought those would be good if you've never seen much anime, or are starting out. They're all quite accessible.
mushishi is a great anime, its not violent or anything (that isnt to say someone doesnt die every second episode) but its just plainly a great anime, though descriptions of the synopsis dont to it justice, honestly, you havent seen anime till youve seen this.
also, a relatively new upcomming anime is called parasyte, again, the description doesnt do it justice, but basically a parasytic alien burrows and consumes this guys hand (introverted highschooler, as always), then consumes the hand replacing it. it was a mind of its own.
similarly other aliens get people, however eating and replacing peoples brains, thus turning them into human-venus fly trap (when eating) like cannibalistic sociopaths .
just watch episode 1, its amazing, its a 2014 anime.
otherwise i suggest sampling many many many anime episode 1 and 2 to find what you like. thats what i do, i just go places and download the first episodes, if i like it ill rent it from a local video store that has heaps of anime, even jap dub. otherwise ill find ways to stream it and save it in maximum quality because thats just how i am, i have to pay for this art, especially when i restrain myself beyond episode 2
