If I had it to do over again, knowing what I know now, I would skip the last two seasons (7 & 8), and perhaps more.
But you definitely want to watch the first four seasons. The show peaks in season 4, and starts going downhill from there.
Given how Season 4 ends (no spoilers), you'll probably want to watch at least part of season 5, just to see how that works out, but after that, you could stop at any time and not really miss much.
"Dexter" was a great show in its first four seasons, but the after that the new writers and showrunner just weren't able to maintain the quality.

The first 6 seasons are great, the final 2 seasons is where it really crashes and burns. Those 2 are optional.

They are all worth watching just to hear what Debra and Musaka have to say!
I love a lot of critically acclaimed shows like Breaking Bad, Game of Thrones, Hannibal, The Wire, Seinfeld, and I heard the same of Dexter, but read the show pretty much crashed and burned near the end. I would hate to watch the series end in a low point, with a crappy finale, etc. Any recommendations on when to watch until?
