If the show is currently airing, then you have no choice...the max you can watch is one episode a week. However, I assume the show is between seasons, and you're probably watching through Netflix. I watch a lot of shows simultaneously, but my main rule is to keep yourself productive. Don't watch more than 2 or 3 episodes in one sitting...force yourself to get up and move around. Take at least a 30 minute break at a time, and do something productive - read a book, take a walk, start some laundry...whatever.
As for your last question, I think it depends on personal taste. I currently follow many different shows (Criminal Minds, PLL, Teen Wolf, The Fosters, New Girl, etc.) and I have no problem. Some people only like to follow one or two at a time...others can manage to keep up with ten or more; it's all personal opinion. TV should be entertainment, first and foremost: if following multiple shows during the prime TV season is stressing you out, then just don't do it! A simple problem to fix.
